Extra Garlic Pesto

Ingredients

• 1 gallon fresh basil*
• 2 cups peeled cloves of garlic*
• 2, 8 oz continers pecorino romano (or parmesan)
• Fresh ground black pepper (to taste)
• Salt (to taste)
• Olive oil (most of a liter)
• Pine nuts (6 to 8 oz, or 16 oz if you are feeling rich)

1. Combine in food processor and grind.  
2. Add a little olive oil to start and more to help it process and get smooth.
3. Store in airtight containers, pank it down nice and smooth, then add a layer of olive oil, freeze. †

Extra Tips and Tricks

* This is just an estimate. The official recipe simply calls for "a lot".
† The layer of olive oil will keep it from getting black (oxidizing).
